Banana-Cinnamon Bread Pudding with Vanilla Sauce – Tusker House

What’s more comforting than rich, flavorful cinnamon bread, blended together with bananas, spices, raisins, nuts, and topped with a silky vanilla sauce?  This warm, cozy dish is a classic at Tusker House at Disney’s Animal Kingdom, served at the buffet for both breakfast and lunch, has become one of their signature offerings.

There’s a lot of ingredients, but this dish comes together really easily.  The bake time can vary depending on how deep the dish you’re baking it is, but you can tell it’s done when the top has puffed and become almost dome-like and the bananas on the surface bubble a bit.

Banana-Cinnamon Bread Pudding with Vanilla Sauce - Tusker House

Ingredients

  • 14 ounces of cinnamon bread, diced into cubes

  • 12 ounces of milk

  • 8 ounces of liquid eggs

  • 4 ounces of white sugar

  • 4 ounces of brown sugar

  • 1 tablespoon cinnamon

  • 1 tablespoon vanilla

  • ¼ teaspoon nutmeg

  • 4 ounces rasins

  • 4 ounces pecans

  • 10 ripe bananas, divided

  • melted butter

  • 3 ounces of "sanding sugar" (1 part white sugar, 1 part brown sugar)

  • Vanilla Sauce

  • 4 tablespoons butter

  • 4 tablespoons flour

  • ¾ cup sugar

  • 1¼ cup milk

  • 1 cup whipping cream

  • 1 egg, beaten

  • ½ tablespoon vanilla paste (or one tablespoon vanilla extract)

  • salt, to taste

Instructions

  1. Add bread squares to a shallow pan or baking dish. Set aside.

  2. In a large bowl, combine all other ingredients for the bread pudding except bananas and sanding sugar. Mash 6 bananas, either by hand or with a fork or immersion blender, add to the liquid. Slice remaining bananas and toss with bread squares in the baking pan. Pour egg mixture over the bread and mix until raisins and pecans are evenly distributed. Set aside for 20-30 minutes.

  3. Preheat oven to 350 degrees.

  4. When ready to bake, brush the top with melted butter and dust with sanding sugar. Bake in 350 degree oven until done, anywhere from 25 minutes to 45 minutes depending on size of the baking pan. Bread pudding is done when it has puffed and looks rounded.

  5. While the bread pudding is baking, make vanilla sauce. Over medium heat, melt butter in a sauce pan and add flour. Cook until thickened into a roux. Add remaining ingredients and cook, stirring constantly, until thickened. About 5-10 minutes.

  6. Serve warm with vanilla sauce.
